Discussions about saddles aside (me, I reckon one shouldn't saddle an animal companion - Gandalf rode Shadowfax bareback, only because Shadowfax consented* - but you could do it either way), I can't see why an animal-focused magical class cannot use the powerful animal that they get as a companion as part of their class feature as a mount.

Dragonlance had dragon riders. War elephants and ostriches are ridden in the real world. If we've got magical beasts and dinosaurs around, why not train them as mounts?

Oh blimey....now don't start taking me literally ffs!!! I am just laughing at Jacks fixation with having a mount and then his arbitrary decision to have a Rhino!!

In many many many fantasy/sci fi situations mounts a many many types have been used so I fully in favour of the interpretation.....my specific humour was that....

....3.5 appeared to have detailed rules to deal with this!

.....and Jack comes up with a Rhino rather than checking into the flora/fauna in the environment he is in!!

Ignore me - or at least humour me!!! lots of love
